I used to eat very mindlessly. I ate a lot of junk so the taste was always good but never good for you. Now, I have a limited amount of space to eat and some nutritional goals that I have to maintain as well. Since surgery food has become more than something to do when I was bored, angry, happy, sad… Now, I aim for health and flavor. It has to taste good but not sacrifice the health standards. These Italian Zucchini Boats were just fantastic!
Italian Zucchini Boats
4 zucchini
1 lb lean ground beef
Italian Seasoning
1 cup diced tomato
Mozzarella cheese
Preheat oven to 350
In skillet brown ground beef and take one of the zucchini and dice it and add to meat. Add tomatoes and season to taste.
Take remaining 3 zucchini and cut off ends and cut lengthwise. Scoop out centers to form boat and place on glass baking sheet with non stick cooking spray.
Spoon meat mixture into boats and top with Mozzarella. Bake at 350 for 15 min.
