I was never much of a cook. My lack of cooking is almost legendary. My husband is my perfect match because he loves cooking and grocery shopping which are two things I could live without. One of the things that really had to change when I had my RNY surgery was I had to learn how to cook.
After much trial and error, I started to learn about seasonings and food combinations and really getting into the calorie counts. It started to become challenging in a good way and even a little bit fun. Many people have asked me about my recipes since I can be a bit of a post-a-holic on Facebook and Instagram.
I will now share my recipes for you on here!
Sausage & Quinoa Stuffed Onions
1 pound ground sausage
1 zucchini
1 cup cooked quinoa
1 large onion
1/2 cup mushroom
Mozzarella cheese
Preheat oven to 350
Skin and cut top off large onion. Separate rings and take the centers and dice.
Place diced onions in hot skillet with ground sausage and brown. Season to taste. When cooked drain and set aside.
Dice zucchini and mushrooms and place in skillet. Add cooked quinoa. When veggies brown add drained sausage.
On baking sheet with parchment paper put onion rings and lightly season.
Take meat mixture and spoon into onion rings. Bake for 15 minutes.
Turn off oven add mozzarella and close door and let cheese melt.
Enjoy!
Make this vegan by eliminating sausage using more quinoa and eliminating cheese.

Can make it vegan also by using vegan “sausage” crumbles and the flavor will still be there!!
Thank you! I’m working on attempting more vegan recipes but my early attempts at tofu left a lot to be desired! 😀 Back to the test kitchen I go and I’d appreciate any other tips you have!

Not my recipe :). Our local farmers market sells it. Quinoa, Kalamata olives, cherry tomatoes halved, small bits of red onion, sprinkling of feta cheese. Prolly some type of vinegar as well. I love this in warm weather.
